In a bowl, add the garlic, gochuchung, sambal, sriracha, soy sauce, oil, honey, garlic powder and black pepper. Mix together the ingredients. This will create the chicken marinade.
Thinly slice the chicken breasts down the middle creating two cutlets. Then, cut each cutlet into two inch rectangles (or squares) however you like your chicken on skewers.
Place the chopped chicken in the bowl with the marinade. Cover with wrap and place in fridge for at least an hour. You can marinade the chicken for up to 24 hours.
While your chicken is marinating soak your wooden skewers in water. Soaking the skewers before assembly will keep the wooden sticks from burning on the grill.
Add the chicken to the skewers (if you used two inch rectangles you should be able to fold the chicken and stick the skewer for secure placement).
On medium heat, grill each skewer turning them about every 3 minutes, until each side is perfectly done. This should take about 10 min or three turns of the skewers.
Peanut Sauce:
In a bowl, mix together the peanut butter, soy sauce, honey, and olive oil.
Once all the ingredients are thoroughly mixed, add water to thin the consistency to preference.
Drizzle the peanut sauce on top of the Spicy Asian Chicken Skewers once done grilling and top with extras (green onion and crushed peanuts).
