Spicy Asian Chicken Skewers with Peanut Sauce

Spicy Asian Chicken Skewers are perfect for the grill and packed with flavor. This recipe is so dang good with the gochuchung, sriracha, and sambal! I've got you covered on flavor bombs with all three of the GOAT chili sauces.

Ingredients

Chicken Marinade

  • 1 lbs Chicken breast- Thinly sliced and cut into 2 inch rectangles.
  • 2 cloves or TBS garlic minced
  • 1 Tablespoon Gochuchung not necessary but ads great flavor
  • 2 Tablespoon Sambal Can sub sriracha
  • ½ Tablespoon Sriracha
  • 1 Tablespoon Low Sodium Soy Sauce Sub Tamari for a gluten free version
  • ¼ cup avocado oil avocado oil is good to use when grilling because it has a high smoke point
  • ½ Tablespoon honey optional
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1 tablespoon Extras** crushed peanuts and green onion

Peanut Sauce

  • 2 Tablespoon Creamy Peanut Butter slightly melted if needed
  • 1 Tablespoon Low Sodium Soy Sauce Tamari for a gluten free option
  • 1 Tablespoon Honey or Maple Syrup
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Water Keep adding water until this is the consistency you want

Instructions

  • In a bowl, add the garlic, gochuchung, sambal, sriracha, soy sauce, oil, honey, garlic powder and black pepper. Mix together the ingredients. This will create the chicken marinade.
  • Thinly slice the chicken breasts down the middle creating two cutlets. Then, cut each cutlet into two inch rectangles (or squares) however you like your chicken on skewers.
  • Place the chopped chicken in the bowl with the marinade. Cover with wrap and place in fridge for at least an hour. You can marinade the chicken for up to 24 hours.
  • While your chicken is marinating soak your wooden skewers in water. Soaking the skewers before assembly will keep the wooden sticks from burning on the grill.
  • Add the chicken to the skewers (if you used two inch rectangles you should be able to fold the chicken and stick the skewer for secure placement).
  • On medium heat, grill each skewer turning them about every 3 minutes, until each side is perfectly done. This should take about 10 min or three turns of the skewers.
  • Peanut Sauce:
  • In a bowl, mix together the peanut butter, soy sauce, honey, and olive oil.
  • Once all the ingredients are thoroughly mixed, add water to thin the consistency to preference.
  • Drizzle the peanut sauce on top of the Spicy Asian Chicken Skewers once done grilling and top with extras (green onion and crushed peanuts).
