Baked Blackberry and Honey Crumble

The best part about this Baked Blackberry and Honey Crumble is serving it up on a hot summer day with a huge scoop of creamy vanilla ice cream! The colors of the blackberries are vibrant and makes this dish look as mouthwatering as it tastes. Its perfect to serve the next time you entertain guests or as something special for breakfast.
Leftovers can be served with greek yogurt as a healthy protein, fiber and berry filled breakfast or snack!

Equipment

  • 10 inch Pie Pan at least 1-2 inches deep

Ingredients

  • 2 Cups Blackberries
  • ¼ Cup Honey
  • 1 ½ Cup Oats
  • 2 Tbs Flax Seed
  • ½ cup Flour
  • ¼ cup Brown Sugar
  • 3 Tbs Melted Butter may need an extra TBS
  • 1 pinch Salt
  • 2 Lavender Tea Bag or Loose Leaf optional for making lavender infused honey

Instructions

Blackberry Filling

  • If you are infusing your honey, this will be the first step.
  • Heat up your honey on the stove top in a sauce pan or in the microwave in a mug. Once the honey is warmed and liquid like, turn off heat, add your lavender tea bags and steep for at least 10 minutes. Remove the tea bags but be sure to squeeze out all the excess honey from the bags. Now your lavender infused honey is ready for use!
  • In a bowl combine blackberries and 1 tablespoon of flour. Stir to coat the blackberries in the flour.
  • Add in your warmed lavender infused honey and stir into the blackberries.
  • Spray a 10-inch pie pan (1-2 inches deep) with cooking spray or butter.
  • Add your blackberry mixture to the bottom of the pan and spread evenly.

Crumble Topping

  • Pre-heat oven to 375 degrees farenheiht.
  • In a bowl combine: Oats, Flour, Flax Seed, Melted Butter, Brown Sugar, Salt, and Cinnamon Stir until fully combined.
  • Take the topping mixture and spread it or crumble it on top of the blackberries. Some areas will have loose crumbles and some will have bigger pieces of crumble. This is how it is supposed to look.
  • Place on the middle rack of the oven and bake for 30 minutes.
  • If you have used more filling then directed or a smaller size pan then directed, you may need to put a pan under your pie dish incase it bubbles over the sides.

Notes

Serve with a huge scoop of creamy vanilla ice cream or have it on top of greek yogurt for a healthy protein and fiber packed snack or breakfast!
