Whether you eat a gluten free diet or not these Greek chicken meatballs make a perfect meal. I love these because they're so versatile for healthy meals. I like to serve with a complex carb or two, some veggies, and a sauce.
½cupOat FlourI blended oats in my magic bullet for this. Oats are widely considered gluten free.*Oat flour can be subbed with equal amount or breadcrumbs (not gluten free) or almond flour (gluten free).

½CupFeta Cheese
3TablespoonsDried of Fresh Dill
1TeaspoonGarlic Powder, Salt, Pepper, Mediterranean Spice BlendFor the Mediterranean Spice Blend I used Trader Joe’s Za’atar Seasoning
Instructions
Preheat oven to 400 Degrees.
In a bowl combine ground chicken, oat flour, egg, olive oil, sriracha, feta cheese, all dry or fresh seasonings, and optional unflavored protein powder.
Use your hands or a spoon to mix the ingredients well.
Line a baking sheet with parchment paper.
Use a cookie scooper to scoop meatballs on to the parchment paper.
Once the meatballs are on the lined baking sheet, go back through and form them into tighter balls by gently squeezing and tossing between hands.
Bake at 400 degrees for 25-30 minuets (until the top is golden brown).
