“You don’t need a silver fork to eat good food.”
— CHEF PAUL PRUDHOMME

I’m not sure how long Incredibly Delicious has been making their delicious focaccia bread, but ever since they started, my Dad has not stopped making their delicious, airy, savory, oddly shaped focaccia bread into sandwiches and creating the best sandwich and a family staple.

Focaccia Bread Sandwich recipe

There are many reason why this Focaccia Bread Sandwich is the best sandwich and a family staple. It celebrates the season, eliminates fridge waste, its portable and ready within 15 minutes. This sandwich is best made in the summer months with all the fresh garden vegetables, herbs, and farmers market finds. This is a great fridge clean out recipe too. If you have some leftover protein or vegetable scraps they can be tossed right on the sandwich for a unique variation each time you make a Focaccia Bread Sandwich.

The best part about the Focaccia Bread Sandwich is that you can wrap it up and take it anywhere. Like the top of Centennial Hill to catch a sunset on the first day the summer heat lets up (in what feels like months) or bring it over to a friends house and serve it up poolside.

Ingredients for Focaccia Bread Sandwich Recipe

Focaccia Bread – sliced and toasted. And preferably from your local bakery (honorable mention @IncrediblyDelicios Springfield IL)

Fresh or dried herbs ( basil, oregano, dill, thyme, rosemary)

Spicy Mayo (mayonnaise and sriracha)

Cheese of choice

Veggies of choice (preferably lettuce, cucumber, bell pepper but use what you have!)

Protein (bacon, deli turkey, grilled chicken, Italian meats)

Instructions for Focaccia Bread Sandwich Recipe:

  1. 1. You have to use focaccia bread. Its pillowy and crunchy and topped with herbs or veggies. The best focaccia in Springfield, Illinois is found at Incredibly Delicious. They exclusively sell this at the Old Capitol Farmer’s Market. This means you cant just walk into the bakery any day and get a focaccia bread. You can call and place a special order to pick up in store. The Farmer’s Market is on Wednesday and Saturday mornings starting in May and ending in October.
PRO TIP you can freeze the focaccia bread to enjoy year round sandwiches 🙂 Thaw it out and enjoy.
  2. Slice the bread longways and toast both sides with olive oil or butter. Its large and oddly shaped so stove top skillet works best.
  3. Apply sauces. Slather mayo and siracha on both sides.
  4. Add herbs. Load it with herbs. If you think you are putting on too many herbs, put more.
  5. Add protein. If you add bacon it will always taste better.
  6. Add veggies.
  7. Slice sandwich into four equal sections. Can be sliced into smaller sections with excellent knife precision :).
  8. What you don’t eat, wrap it in tinfoil. When you are ready to eat the rest put it in the oven for 10 minutes or enjoy cold.
