Gluten Free Greek Chicken Meatballs

Whether you eat a gluten free diet or not these Greek Chicken Meatballs make a perfect meal. I love these because they’re so versatile for healthy meals. I like to serve with a complex carb or two, some veggies, and a sauce.

This Greek variation includes lots of dill and feta cheese that really sets it apart.

Greek chicken meatballs are great to keep in the freezer.  I take out them out on a busy week and have an excellent protein options to add to a salad, wrap, veggie bowl, or just heat up and eat as is!

Serves: 4-6

Time: 45 minutes

Ingredients for Greek Chicken Meatballs:

Ground Chicken

Oat Flour (I blended oats in my magic bullet for this) Oats are gluten free 🙂

 *Oat flour can be subbed with equal amount breadcrumbs or almond flour. 

Egg

Olive Oil

Sriracha (this adds a lot of flavor don’t skip)

Feta Cheese

Dried of Fresh Dill, Garlic Powder, Salt, Pepper, and a Mediterranean Spice Blend (I used Trader Joe’s Za’atar Seasoning)

*Optional* Unflavored Protein (I used Vital Proteins blue bottle)

Instructions:

  1. Preheat oven to 400 Degrees.
  2. In a bowl combine ground chicken, oat flour, egg, olive oil, sriracha, feta cheese, all dry or fresh seasonings, and optional unflavored protein powder.
  3. Use your hands or a spoon to mix the ingredients well.
  4. Line a baking sheet with parchment paper.
  5. Use a cookie scooper to scoop meatballs on to the parchment paper.
  6. Once the meatballs are on the lined baking sheet, go back through and form them into tighter balls by gently squeezing and tossing between hands.
  7. Bake at 400 degrees for 25-30 minutes (until the top is golden brown).
  8. Pair with salad, grains, or wrap and top with Greek yogurt dressing.

  • 1 pound Ground Chicken
