This summer side dish of sweet corn and zucchini is PERFECT for summer grilling. The char on the zucchini and the creamy homemade basil ranch make it drool worthy. This can be served as a side dish or served stand alone. I love to pair it with a protein. Because this recipe is more extravagant than your average veggie side dish, I tend to serve it when I have company over for dinner. It takes a bit more effort than just placing corn on the grill but I promise this summer side dish is sure to please !!
Serves: 2-4
Time: 30 minutes
Ingredients for Summer Sweet Corn and Zucchini:
Zucchini
Red potato
Sweet corn (off the cob)
Avocado oil
Seasoning (salt, pepper, garlic powder)
Instructions for Summer Sweet Corn and Zucchini:
- Thinly slice zucchini and potato.
- Cut corn off the cob if necessary.
- In a bowl add sliced potatoes, zucchini, corn, and 1 tsp of avocado oil. Toss until coated
- On a baking sheet (one you don’t mind ruining on the grill that does NOT have non-stick coating because this will go directly on the grill) layer the vegetables.
- The order of layering is potatoes, zucchini, then corn. The potatoes take longer to cook that’s why they are laid first.
- Season with salt, pepper, garlic powder
- Grill on medium for about 20 min or cook in the oven at 350 for 20 min.
Ingredients for Homemade Basil Ranch Dressing:

Greek yogurt (or sour cream)
Milk
Lemon
Dill (fresh or dried)
Garlic (minced)
Seasoning (salt, pepper, onion powder)
Basil leaves (fresh)
Instructions for Homemade Basil Ranch Dressing:
- Add all ingredients to a blender.
- Blend on high until fully incorporated.

Ingredients
- 1 larg Zucchini
- 1 Red potato
- 2 ears Sweet corn sliced off the cob
- 1-2 tbsp Avocado oil
- ¼ tsp each Seasoning salt, pepper, garlic powder

Homemade Basil Ranch
Ingredients
- 2 Tablespoons Mayo
- 2 Tablespoons Greek Yogurt or sour cream
- 1 Tablespoon Milk
- Squeeze of lemon
- ½ teaspoon fresh or dried dill
- ¼ teaspoon garlic powder
- ¼ teaspoon pepper
- ¼ teaspoon onion powder
- ¼ teaspoon Salt pepper, onion powder
- 4-5 basil leaves large or small, it doesn’t take much
Instructions
- Add all ingredients to a blender and blend until fully incorporated.
- Add more mayo/milk/Greek yogurt to get the consistency of Ranch that you prefer. I like mine a perfect mix between creamy and runny.
